Review: Mosaic IPA - Saint Archer Brewing Co.

Mosaic hopping has become an art in itself and this is by far my favorite installment from Saint Archer Brewing Co.

Appearance: Brassy and golden with a fluffy and fresh head. copyrightbippsbeer

Nose: Pineapple, tropical, peach, floral. Mosaic and simcoe come together to surprise your nose.

Taste: Earthy yet subtle. Pineapple and bitter citrus without too much as it is very well rounded and bright. This is actually a double IPA so you're going to get a nice hoppy finish. This is so mouthwateringly scrumptious that it will keep you sipping to cleanse away the hoppy bitterness.

Mouthfeel: Light and clean. You almost feel quenched after each sip.

Food Pairings: Golden raisins and cheese, olive oil, with subtle flavors. Did you know IPAs pair well with carrot cake? This one is particularly delicious with carrot cake. If you make it yourself make sure that it has all of the wonderful strong flavors that carrot cake should have. Total comfort food with tart cream cheese and spices.
